Introduction

Number of Servings: 4

Ingredients

    14 oz shrimp, peeled & deviened (tails removed)
    4 Tbsp Newman's Own Lighten Up Sundried Tomato dressing
    1 clove garlic, minced
    1 can (28 oz ) diced tomatoes, undrained
    1 cup water
    2 cups instant brown rice, uncooked
    1 cup chopped green pepper
    1/4 tsp crushed red pepper
    italian seasoning to taste



Directions

Heat dressing in large skillet on medium heat. Add shrimp & garlic and cover. Cook for 5 minutes or until shrimp is pink. Remove shrimp from skillet & set aside.

Add canned tomatoes & water to skillet. Stir in rice& seasonings; bring to boil. Reduce heat to low; simmer, uncovered for 5 mins. Add green peppers simmer for additional 5 mins. Return shrimp to skillet & simmer for 5 minutes and serve.
