Number of Servings: 8

Ingredients

    * Frozen mixed veggies- 2 cups (cooked)
    * Uncle Bens Brown Rice- 1.5 cups (cooked)
    * Fresh Mushrooms - 1 cup
    * Raw onion- .5 cup
    * 2 large eggs- scrambled
    * Canola- 2 tbsp
    * Worchshire Sauce- optional
    ** as far as the rice the 1.5 cups is for the uncooked rice it will be much more cooked of course
    ** the worchshire sauce is not included on the nutritional facts

Directions

1. Chop the onion & mushrooms
2. Cook rice as instruction on the back of the box
3. Boil & drain veggies
4. Scramble 2 eggs
5. Mix onion, muchrooms, rice, veggies & eggs in a large bowl. Feel free to add a little worchshire sauce and oinion powder for flavor.
6. Heat a large frying pan with 2 tbsp of canola oil
7. Add rice mixture to the pan and cook to your liking

Makes about 8 1 cup servings

    I loved this. I used to make fried rice with a seasoning packet, which was a lot of sodium. This recipe tasted better and was much more healthy! Thanks! Great stuff! - 3/5/09
