Ingredients

    3 lb. Sweet or Yellow Onions, cut in quarters
    (add 1/4 cup Hawaiian/ or Kosher Salt and let sit for 2 hours)
    1 cup vinegar
    1/2 cup water
    1 2/3 cup sugar
    1 T. mustard seed
    1 1/2 t. celery seed

Directions

Put onions in gallon jar. Boil vinegar, water, sugar, and mustard seed for 5 minutes. Remove from heat; add celery seed. Pour hot vinegar mixture over onions in jar. Cool and refrigerate.

Keeps well for months in frig.
