Ingredients

6 oz mushrooms, sliced
2 oz green onions, diced
2 oz spinach, raw
6 oz tomatoes, diced
4 oz green peppers, diced
7 oz chicken, diced
1 quart egg substitute
1 oz parmesan cheese, shredded
Mrs. Dash Table Blend
Directions
Cut up all your vegetables.
Preheat broiler.
Spray your oven-proof pan with Pam and saute the mushrooms. When the mushrooms are almost done, add the green onions for 1 minute. Then add the spinach, tomatoes, green peppers, and chicken. Stir and cook until spinach starts to wilt. Then add the egg substitute. Sprinkle with Mrs. Dash and Parmesan and cook until the sides start to separate from the pan.
Place the pan in the broiler for 5 minutes or until the top is brown.
Remove from pan promptly and let rest 5 minutes before serving.
Cut into 6 pieces and serve.
