My husband just loved these-- even my kids thought they were great. Very easy but they look like they are difficult and would impress for a dinner party. Ingredients

1/2 cup onion, chopped
1cup mushrooms, chopped
1 cup cooked white rice
3/4 cup chicken broth, divided
1/4 cup part-skim ricotta cheeese
1/4 cup part-skim mozzarella cheese
2 TBSP Parmesean Cheese
1 TBSP fresh thyme, chopped
4-5 oz boneless pork loin chops
Directions
Sautee onions and mushrooms in skillet with cooking spray for about 5 minutes.
Remove pan from heat, stir in rice, 1/4 cup broth, cheeses, and thyme.
Cut deep pockets in each pork chop, spoon 1/2 cup rice mixture into each pocket. Put same skillet back on burner, spray with cooking spray, brown chops one each side for about 2 minutes per side. Add remaining broth. Reduce heat to medium, cover and cook for 10 minutes. Serve with veggie or salad. Makes 4 servings.
