Ingredients

    FILLING

    * Manicotti Shells, 14 serving
    * Olive Oil, 1 tbsp
    * Onions, raw, .25 cup, chopped
    * Green Peppers (bell peppers), 0.5 cup, chopped
    * Ricotta Cheese, part skim milk, 450 grams
    * mozzarella cheese (low fat, no name), 200 gram(s)
    * Egg, fresh, 2 large
    * Ground beef, extra lean, 233 grams
    * Spinach, frozen, 1 package cooked (10 oz) yields

    TOPPING

    * shredded parmesan, 0.50 cup
    * Oregano, ground, 1 tsp
    * Basil, .5 tbsp
    * Tomato Sauce, 3 cup

Directions

Boil Noodles according to package directions. Drain & Rinse in cold water (to stop them from cooking). Heat oil and saute onion & peppers. Brown the beef. Allow to cool. Combine with rest of filling ingredients and stuff into pasta shells.
Place in a lightly greased casserole dish. (or, spread a little tomato sauce in the bottom first)
Combine spices with tomato sauce. Pour over pasta and sprinkle with parmesan.
Cover & bake for 30 minutes @ 350 degrees. Uncover and bake for another 10 minutes.
