Ingredients

Turkey breast meat, 32 ounces, ground up
1 large onion chopped
1 chopped red bell pepper
1 tsp cumin
1 tsp sage
1.5 tsp paprika
1 tbsp dried parsley
8 medium tomatillos (green tomatoes)
1 jalapeno pepper
2 cups Monterey Jack Cheese
Tortilla Chips, 1 bag (7-1/2 oz) broken into pieces
Directions
Pre-heat oven to 350 degrees.
Put the tomatillos and jalapenos in a pot with water and bring to a boil for about 7 minutes. Drain and put in a blender (add salt if you'd like), pulse, set aside.
Drizzle about a tablespoon of olive oil in a pan. When heated, add the chopped onion and red bell pepper. Once softened, add the ground turkey meat, paprika, sage, cumin, and parsley. Cook the turkey meat thoroughly. Add salt to tast.
Add the tomatillos mixture to the turkey meat and mix well. Place this mixture into a baking pan, preferably glass.
Place 10 dollups of sour cream on the meat well spaced out. Cover with the broken up tortilla chips. Lastly cover the tortilla chips with the cheese.
Place in a pre-heated oven for approximately 30 minutes (or until cheese melts).
