Ingredients

1 spaghetti squash
1 box whole wheat spaghetti
1 Tbsp. olive oil
1/2 cup onions, chopped
1 clove garlic, minced
1 red bell pepper, diced
2 or 3 tomatoes, chopped
1 tsp. basil
1/2 tsp. salt
black pepper to taste
a few slices of mozzarella cheese
2 or 3 Tbsp. parmesan cheese
Directions
Preheat oven to 350. Pierce spaghetti squash with sharp knife a few times, place on baking sheet, and bake for about an hour. Meanwhile, boil pasta. When squash is cool enough to handle, cut in half, remove seeds, then use fork to separate flesh into strands. Combine with drained pasta.
In big pan, heat olive oil, then saute up onions, garlic, and red pepper for 5 minutes; then add tomatoes and spices. Combine with squash and pasta, put in casserole, top with cheeses, bake at 350 for 40 minutes or so. Yum.
