Introduction

A great Italian soup that can be served with day-old bread on top and parmesan cheese. A great Italian soup that can be served with day-old bread on top and parmesan cheese.
Number of Servings: 6

Ingredients

    4 cups of Chicken Broth
    1 onion, diced
    3 carrots, chopped
    2 stalks of celery
    2 cloves of garlic chopped
    1 tbsp of olive oil
    1 sliced zucchini
    3 cups of greens (spinach, green pepper, etc)
    19 oz of Stewed Tomatoes or fresh equivalent
    19 oz. can of beans (mixed or chickpea work best)
    1 bunch parsley
    Other Veggies to Taste (Corn, Green beans, etc)

Directions

Saute onions, carrots, celery and garlic until tender. Add tomatoes, zucchini, parsley
and greens, then add just enough broth to cover. Cover and simmer for an hour. More the better!

Add the beans and cook for an addtional 15 minutes. Season with salt and pepper
to taste.

Can also be served with a small dollop of pesto with olive oil and parmesan cheese

    This looks like a great soup, but it's not really Ribollita without bread in it...just a vegetable-bean soup. - 6/11/13
