Introduction

Ingredients

2oz butter
2 onions
2tsp plain flour
1 litre vegetable soup
4 tbs dry white wine
4 slices crusty bread
5 oz grated Gruyere cheese
Salt
Pepper
Directions
1 Melt the butte in a large, heavy-based saucepan. Add the sliced onions and cook over a moderately low heat, stirring occasionally, for about 12 minutes, or until lightly browned. Stir in the flour and continue to cook, stirring constantly, until the flour turns a sandy colour.
2, Pour in the stock and wine, then bring to the boil, stirring constantly. Season to taste with salt and pepper, cover and simmer for 15 minutes.
3, Spread out the slices of bread in a grill pan and toast them lightly. Divide the grated cheese among them. Return to the grill and heat until the cheese is bubbling. Place the cheese toast in four warmed, heatproof bowls.
4, Using a slotted spoon, scoop out the onions from the soup and divide them equally among the heated bowls. Pour over the soup and serve immediately.
