I've been experimenting for years, looking for a low calorie but tasty muffin that I can make on my own. I finally found it! These pumpkin muffins are a tasty healthy little snack!One muffin is 66 calories, 0.7 g fat, 2.1 grams of fiber. Ingredients

2 eggs, beaten
1 cup sugar
1.5 cups canned pumpkin
1.2 c water
1 c whole wheat flour
1 cup wheat bran
1 tsp baking soda
3/4 tsp salt
1/2 tsp baking powder
1 1/2 tsp pumpkin pie spice
Directions
1. preheat oven to 350 degrees
2. combine eggs, pumplin, water in a bowl
3. stir together dry ingredients
4. add dry ingredients to wet ingredients and blend
5. spray 24 muffin tins (or use baking cups)
6. evenly distribute batter
7. bake 20 minutes or until toothpick inserted in middle of one muffin comes out clean.
8. remove from the pan right away!!
