Introduction

Ingredients

    FILLING:
    1/4 cup whole wheat flour
    1 Tbsp. nutritional yeast flakes
    1 tsp. salt
    1/2 tsp. garlic powder
    2 cups tofu (the firmer the better) cut in 1/2" cubes
    2 Tbsp. olive oil
    1 cup onions, cut in wedges
    1 12-16 oz package of frozen vegetables

    GOLDEN GRAVY:
    1/3 cup white unbleached flour
    1/3 cup nutritional yeast flakes
    1/4 cup oil
    2 cups water
    1 Tbsp. soy sauce or tamari

    CRUST:
    1 Cup flour (I like to use whole wheat pastry flour)
    1/2 tsp. salt
    1/3 Cup Olive Oil



Directions

FILLING:
Combine in a small bowl:
1/4 cup whole wheat flour
1 Tbsp. nutritional yeast flakes
1 tsp. salt
1/2 tsp. garlic powder
Add and stir to coat:
2 cups tofu (the firmer the better) cut in 1/2" cubes

Heat a skillet and saute tofu in:
2 Tbsp. olive oil until lightly browned. Add to the pan 1 cup onions, cut in wedges.
When onions are soft, add other vegetables. Make Golden Gravy (see below) and add to the vegetables/tofu/onions. Place pie filling in a casserole and top with pastry crust (see below). Bake at 375 degrees for 30 to 40 minutes until top is lightly browned.

GOLDEN GRAVY:
Toast the flour over medium low heat until you can start to smell it. Stir in the yeast, then add oil. Cook a few minutes until bubbly, then add water and cook, whisking until it thickens and bubbles. Add soy sauce, and add salt and pepper to taste.

Mix 1 cup flour (I like to use whole wheat pastry flour but whatever is fine), 1/2 tsp. salt and 1/3 cup olive oil. Add just enough warm water to form a ball (about 2 Tbsp.). Roll out between two sheets of waxed paper and place on top of pot pie.
