Introduction

This is a delicious, low-fat version of the spicy beef soup served in Vietnamese restaurants around the world.

Ingredients

    4 tbs of soy sauce
    /2 tbs of fish sauce
    Beef stock (from scratch is best but who has the time! I go 1-2 cups per person)
    1/2 tbs of kejap manis
    garlic (1/2 clove)
    ginger (1 cm piece)
    thinly sliced lean beef (100 grams ish)
    50 grams Rice stick noodles


    For the side:
    Lime wedges
    1/2 red chili sliced
    Mint
    coriander
    spring onion/green onion chopped




Directions

I boil the noodles in the stock with the soy, ginger, garlic, fish sauce, and kejap manis. When the noodles are nearly done, add the beef and poach quickly until cooked to your liking. Traditionally you serve with the chilli, chopped herbs and spring onion on the side and add to taste. It's all part of the fun. That's for one serve so you can double etc the ingredients accordingly and just have one big plate of herbs, chilli, lime,onions etc which make it a lovely meal to share.
