This is a mildly spicy lentil main course with spinach. Ingredients

1 cup dry lentils
3 cloves garlic finely chopped
1- 1 inch or so piece of ginger root finely chopped
1 small onion finely chopped
1 tablespoon Patak's Mild Curry Paste (substitute any of the spicier varieties if you prefer -- the vindaloo is fantastic!)
1 box of frozen spinach leaves
4 cups of water
Directions
Makes 2 main course meals or 4 side dishes.
Rinse and sort through 1 cup of lentils. I used the green variety but you can substitute red lentils or puy lentils if you like.
After rinsing add lentils to a pot with 4 cups of water. Bring to boil over a medium heat - lentils foam and boil over a pot if you start at a higher temperature.
Let simmer for about 20 minutes. Meanwhile finely chop the onion, garlic and ginger. Add to lentils along with the tablespoon of Patak's Mild Curry Paste. Stir and cover, reduce heat to low.
Defrost and chop the frozen spinach. Add to pot and simmer for 10 minutes.
This is great eaten with brown basmati rice or white basmati rice!
