Introduction

Ingredients

1 Large onion, chopped
2 tbs butter
salt and pepper
1/2 cup brown rice (long grain)
3-4 c low sodium chicken broth
1-2 lbs carrots, peeled and diced
1/4 cup half and half
Directions
1) In a large saucepan, sweat onions in the butter. Add salt, pepper.
2) When onions are soft, add brown rice. Sautee for about 5 minutes
3) Over medium-high heat, SLOWLY add chicken broth. This is very important. The broth must resume its temperature before you add more (add in 1/2-1 c increments, allow to come to temp).
4) Allow brown rice to begin to soften (about 15-20 minutes). Add carrots.
5) SImmer over medium-high heat from appx. 40 minutes, or until carrots are soft. Rice should still hold some of its texture.
6) With a stick blender or in a food processor, blend ingredients until texture of "cream of wheat." Add half and half to thicken (You may need less than advised).
7) Serve with crusty bread. Make 3-4 servings.
