Quick, tasty & nutritious, this is a light meal in itself or make it a snack by using just 1 slice of bread. Quick, tasty & nutritious, this is a light meal in itself or make it a snack by using just 1 slice of bread.

Ingredients

    2 slices of whole grain bread
    1/2 cup salsa
    1 Tblsp parmesan (or other) cheese

Directions

Place 1 slice of bread on micro-waveable plate. Spread 1/4 cup of salsa on it, cover with 2nd slice and the rest of the salsa. Top with the cheese. Microwave for 30-60 seconds.

I've used different amounts & types of cheese-the choice is yours but, of course, the fat & calories may be different from what is listed here. Or make it without the cheese to have even less fat & calories!
