Introduction

This is a delicious meal using chickpeas that the whole family will love. My girls always ask for seconds. This is a delicious meal using chickpeas that the whole family will love. My girls always ask for seconds.
Number of Servings: 6

Ingredients

    1 Tbsp Olive oil
    1/4 cup chopped onions
    2 garlic cloves, crushed
    1 can (19oz) chickpeas, drained and rinced (2 cups)
    1 1/2 salt reduced or fat reduced chicken broth or homemade
    1/4 tsp crushed red peper flakes
    3/4 pqt dry whole wheat pasta
    3/4 cup cherry tomatoes halved (opt)
    2 tbsp minced fresh parsley (opt)
    1 tbsp fresh lemon juice (opt)

Directions

Heat oil. Add onion & crushed garlic, saute 1 minute.
Add chickpeas, broth and red peper flakes.
Bring to a boil, cover, reduce heat and simmer 15minutes.
Use processor to puree smooth.
Meanwhile cook pasta.
Combine sauce, pasta, cherry tomatoes, parsley & lemon juice. Mix & serve.
Serves 6
