Number of Servings: 8

Ingredients

    1 T Olive oil
    1 onion chopped
    1 red bell pepper, chopped
    2 cloves garlic, minced
    One bay leaf
    1T chopped fresh thyme
    1 Quart chicken stock or broth
    3 half breasts of skinless, boneless chicken
    1/2 bag of frozen kale
    One package of Uncle Ben's Brown and Wild Rice Instant microwave rice (2 servings)
    1/4 cup of lemon juice
    4 shakes of Tabasco sauce
    1/4 cup of fresh dill, chopped
    Salt and pepper to taste


Directions

Saute the onions, peppers, garlic, bay leaf and thyme for five minutes until soft. Add stock and simmer for a few minutes. Add kale, chicken, and rice. Bring it back to a simmer and cook for about 5 minutes. Add dill, hot sauce, lemon juice and salt and pepper to balance. Makes 8 11/2 cup servings.
