Introduction
I probably make these pancakes once a week for breakfast & have a boiled egg or turkey sausage with them. This recipe serves 4, so I half the recipe just for me & eat these pancakes with a few chopped walnuts, half a cup of mixed berries & maple syrup.While there is zero white sugar or flour, you can find buckwheat & spelt flours at places like Whole Foods or most likely any organic or health food grocery store.
*modifications:
1) you can use unsweetened soy milk/rice milk/almond milk or even regular milk for this recipe.
2) I use extra virgin olive oil since I don't have vegetable oil.

Ingredients

1 1/4 cup Soy milk or Rice milk (or regular milk)
1 tbsp lemon juice
1 tbsp vegetable oil
1 tbsp real maple syrup
1/2 cup buckwheat flour
1 tsp baking soda
1/2 cup Spelt flour (or AP flour or rice flour)
1/2 tsp salt
2 bananas, sliced
* plus extra maple syrup for serving, if desired.
Directions
Mix all wet ingredients together in a small bowl.
Mix all the dry ingredients together in a slightly bigger bowl.
Add wet to dry & stir to combine - do not overmix.
Use a cooking spray on your skillet (cover well, pancakes tend to stick!)
Heat skillet over medium heat, ladle pancakes using a 1/3 cup measuring cup. Place sliced bananas on top of each pancake. Cook 1-1 1/2 minutes each side.
Serve with chopped walnuts & real maple syrup.
