Introduction

Ingredients

1 small onion, chopped
2 cloves garlic, chopped
2 tbsps olive oil
1 cinnamon stick (a teaspoon of ground cinnamon can be used as an alternative)
1 star anise
4 cloves
1litre (or so) of 2% milk
8 chicken drumsticks
2 medium sized potatoes, diced
3 tbsps curry powder
1 bay leaf
Directions
Mix 1 tbsp of the curry powder with a little water to make a paste. Add this to a big pot with the oil, garlic, onion, cinnamon, star anise, bay leaf and cloves. Fry gently until the spices release their natural aroma (about 1-2 mins). Add the chicken drumsticks and fry 1 min until coated. Add enough milk to cover all the ingredients (might be abit more or less than a litre) and the rest of the curry powder. Bring to the boil then cover and simmer for about 30 mins (stirring occasionally) or until the chicken is almost cooked. Add the potatoes and return to the boil. This is a good time to taste the sauce and add more curry powder or milk to suit your own heat preference. Simmer for a further 10 mins or until the potatoes are cooked.
Remove the bay leaf, cinnamon stick, star anise and cloves if you can find them!
I usually serve with rice and poppadums.
