Introduction

Number of Servings: 6

Ingredients

    * Butter, salted, 2 tbsp
    * Onions, raw, 1 medium (2-1/2" dia) - chopped finely
    *Flour, white, .25 cup
    * Curry powder, 1 tsp
    * Paprika, 1 tsp
    * Chicken Broth or Bouillon, 2 cup (8 fl oz) (warmed up but not boiling)
    * Yellow Sweet Corn, Canned, 1 can (12 oz)
    * Milk, 1%, 2 cup
    * Tuna, Canned in Water, drained (about 6 oz)

Directions

makes 6 cups (4 - 1.5 c serving)
in a large soup pot

melt butter and add chopped onion. heat on low until onions are translucent (about 3 min).
add flour, curry powder and paprika - slowly continue to heat and stir well.
slowly add in warmed chicken broth and stir continuously. bring to a boil for 1 min. This will thicken the soup.
add sweet corn (juice and all), and slowly add milk. simmer for 5 minutes.
add crumbled tuna to soup and simmer for 5 min.

serve with a garnish of parsley or cilantro and cheddar cheese.
