Ingredients

1 lb. chicken breast
2 garlic cloves, minced
1 tsp. dried thyme
salt and pepper to taste
1 T. cornstarch
3/4 c. pineapple juice
1/4 c. water
1/4 c. Dijon mustard
3 T. honey
3 cups cooked brown rice
Directions
Rub chicken with garlic and thyme. Sprinkle with salt and pepper. Cook in skillet over medium heat until no longer pink, can use a dash of olive oil if needed to keep chicken from sticking.
In a bowl combine cornstarch, pineapple juice and water until smooth. Stir in mustard and honey. Add juice mix to skillet. Bring to a boil, cook and stir for 2 minutes or until thickened.
This recipe freezes well, so you can store some for a quick meal later on! If you freeze, thaw in the refrigerator completely, remove 30 minutes before baking to bring to room temp. Cover and bake at 350 degrees for about 30 minutes, or until hot.
