I like this better and it's way more healthy than real egg salad. I like this better and it's way more healthy than real egg salad.
Number of Servings: 4


    1. 12 ounce package silken lite firm mori-nu tofu
    2. 1/4 cup nasoya mayonnaise
    3. 2 Tablespoon Dijon mustard
    4. 1/8 teaspoon cayenne pepper
    5. 1/2 teaspoon turmeric
    6. 2 Tablespoon dried parsley
    7. 1/2 Tablespoon dried dill
    8. 1/4 cup chives
    9. 1/4 teaspoon salt (or to taste)


1. Drain tofu well, cut into 1/4's wrap in paper towel and weigh down for about 15 minutes.
2. Mash tofu with fork until mashed into crumbles, add remaining ingredients and mix well.
3. Refrigerate overnight to allow flavors to mix.
4. May be rolled burrito style in lettuce leaf or use in a sandwich or pita pocket.

    I made this egg salad and put celery and mustard with horseradish. It has the same texture as egg salad. Its very good - 3/23/16
