Ingredients

1/2 pound lean ground turkey (93/7)
1 tbsp chili powder
2 tsp cumin
14-oz. can black beans, rinsed and drained
14-oz. can diced tomatoes w/green chilis
1 onion, diced
1 green bell pepper, diced
2 oz. reduced-fat Monterey Jack cheese
4 green onions, sliced thin (or to taste)
Crust:
8-oz package corn muffin mix
2 oz. reduced-fat Monterey Jack cheese, shredded
1 cup nonfat sour cream
1/4 cup green chilies, drained (optional)
Directions
1. Preheat oven to 400 degrees.
2. In a large nonstick skillet over medium heat, brown ground turkey with chili powder and cumin for 5 minutes or until turkey is no longer pink. Add onion and pepper and saute until soft, about 5 min. Drain any excess grease.
3. Add beans and tomatoes and heat to boiling; then reduce heat to simmer.
4. Meanwhile in a mixing bowl, combine all ingredients for the crust; stirring just until moist. Spray an 11 x 7 inch casserole dish with cooking spray. Spoon 2/3 of the muffin mixture into the dish, spreading it over the bottom and up the sides. Spoon turkey and bean mixture over the batter. Then dollop remaining muffin batter around the outside of the dish, spreading it around the outside edge and leaving a small open circle in the middle. Sprinkle the cheese on top of the batter and bake for 25 minutes.
5. When the pie is done, allow to sit for 5 minutes, then slice and serve. Top with the green onions and sour cream (optional, not included in nutrition info).
