Ingredients

    1-3/4 cup all-purpose flour
    1-1/2 cup sugar
    1 tsp baking soda
    1/2 tsp salt
    1 egg
    2 egg whites
    1 cup ripe bananas, mashed
    1/2 cup unsweetened applesauce
    1/4 cup reduced fat buttermilk plus 1 Tbsp
    1 Tbsp canola oil
    1 tsp vanilla extract
    1 cup nuts, chopped

Directions

Preheat oven to 325. In a large bowl, combine flour, sugar, baking soda, and salt. In a separate bowl, stir together egg, egg whites, banana, applesauce, oil, and vanilla extract. Stir wet ingredients in with dry ingredients, until just combined. Fold in nuts of your choice. Pour into greased bread pan and bake at 325 degrees for 1 hour and 20 minutes, or until toothpick comes out clean. Enjoy!

    Wait! What do I do with the buttermilk? I assume put it in with the wet ingredients, but it wasn't listed so just double checking.
