Ingredients

    2 T. onion, chopped
    2 c. fresh spinach, chopped
    1/2 c. egg substitute
    1/4 c. feta cheese, crumbled
    garlic pepper
    salt

Directions

Spray non-stick pan with olive oil cooking spray. Saute onions and spinach until wilted. Spread evenly on bottom of pan and pour egg substitute over spinach. Allow to cook until able to flip like a pancake. Sprinkle feta cheese over top and fold omlet in half encasing the cheese inside. Fry until browned and then flip to other side.
