Introduction

Ingredients

    1 medium onion, chopped
    2 cloves garlic, minced
    2 eggs, beaten
    1 package ground turkey
    salt and pepper to taste
    10 oz. frozen chopped spinach, thawed and squeezed dry in a towel
    1/2 cup feta cheese crumbles
    2 teaspoons dried oregano
    1 cup cooked quinoa
    1/4 cup chicken broth
    drizzle of extra virgin olive oil
    1/4 cup pesto (for the top)

Directions

Preheat oven to 375 degrees.

Combine all ingredients except pesto. Spread turkey mixture into a greased loaf pan. Top with pesto.

Bake one hour. Let rest 10 minutes before serving.
