Introduction

White Bean Chili is a popular dish in the south and is usually made with chicken. I chose Ground Turkey to eliminate some of the work and to add a different flavor too the original recipe. Ingredients

    1 lb dried Small White beans
    3/4 C. diced Onions
    2 cloves Garlic, minced
    1 tbsp. olive oil
    2 tsp. ground cumin
    1 tbsp. ground oregano
    2 tsp. cilantro
    1/4 tsp. red pepper (opt)
    2 1/2 lbs. ground Turkey
    2 qt. low salt Chicken Broth
    1 C. Green Chilies, canned

Directions

Place beans in a saucepan;cover with water bring to a boil. Boil for 2 minutes. Remove from heat. Soak for 1 hour ; Drain and rinse. in a 5-quart soup pot, saute onion in oil until tender. Combine seasonings and add half to pot. Saute 1 minute. Add beans, broth and garlic; bring to boil. Reduce heat, simmer 2 hours. Meanwhile, Add remaining seasonings to turkey; mix well, let stand. Crumble turkey into beans,stir in chilies. Simmer 1 1/2 to 2 hours
Yield 10 1 3/4 cup servings
