The best, healthiest banana muffins ever! The best, healthiest banana muffins ever!
Number of Servings: 22


    1 Cup Smart Balance Butter sticks
    2/3 cup honey
    2/3 cup brown sugar
    2 eggs
    1/2 cup fat free yogurt
    6 bananas
    2 cups whole wheat flour ( I used fresh milled)
    1 cup white (or bread) flour
    2 tsp baking soda
    1 tsp cinnimon


1. Cream butter, sugar, and honey.
2. Add eggs.
3. In a separate bowl mix flours, baking soda and cinnimon.
4. In the blender or mixer, cream bananas and yogurt together until smooth.
5. Alternate adding banana/yogurt and flour mixture into butter mixture.
6. Pour into muffin tins and bake at 350 for 25 minutes.

    For the person who asked about the eggs, if you click on 'ingredient details' it says 2 large eggs. Hope that helps.

  • These muffins are delicious. I used two large eggs... seemed to work fine. I find it hard to believe that these muffins pack as much caloric punch as a fully iced cupcake. In nutritional info, the butter is listed twice. That might be throwing off the calculations? - 4/15/12

    Thanks Davidjbrock. You were right, I had listed the butter twice. I changed that, added the eggs to the ingredients list and spelled yogurt correctly! :)

  • So, this really has 16.9 grams of fat per serving? I think not. And where's this "ingredient detail" I'm supposed to click to find how many eggs?
