Ingredients

    8 oz cooked shrimp
    2 cups cooked pasta orzo
    8 fl oz chicken broth
    1 fl oz white wine
    jar capers
    sm can peas, mushrooms
    lg can artichokes
    fresh spinach, 1/2 bag
    1 tbs olive oil
    Seasonings: garlic, fresh parsley, Tony Cacherie salt, pepper, dried onions, hot red pepper

Directions

Precook the orzo pasta according to directions. Cook the deshelled shrimp and dried onions for 2-3 minutes with olive oil and Old Bay seasoning. Add spinach, artichokes, capers, mushrooms, peas and cook for 5 minutes in chicken broth and wine with seasonings. Mix with orzo, and sprinkle with fresh grated parmesan cheese.
