Introduction

This is a gluten and sugar free recipe. The muffins will be slightly crumbly, but really yummy. You can also substitute dates for the raisins. This is a gluten and sugar free recipe. The muffins will be slightly crumbly, but really yummy. You can also substitute dates for the raisins.
Number of Servings: 24

Ingredients

    Combine and set aside:
    1 C unsweetened applesauce
    1 t lemon juice
    Measure and Mix together:
    2 cup rice flour
    1 tsp soda
    1 tsp cinnamon
    1/2 tsp cloves
    1/2 tsp salt
    1/2 cup raisins
    In another bowl mix together:
    1/2 cup extra light olive oil
    1/3 cup agave syrup
    2 eggs
    1/2 cup pumpkin seeds/sunflower seeds/ or walnuts

Directions

Add applesauce and dry ingredients alternately with the other liquid ingredients. Beat well. Stir in the nuts and raisins.
Makes 12 muffins.
Cook at 350 deg for approx. 20 minutes.
