Ingredients

- 1/2 kb of lean ground turkey
- 3 medium to large tomatoes
- 1/2 cup of brown rice (uncooked)
- 1/2 can of Rotel tomatoes (or other diced tomatoes w/ green chiles)
- 3/4 cup of Mexican style cheese
- 1 tbsp of chili powder
- 1 tsp garlic
- 1 tsp oregano
- 1 tsp cumin
- salt and pepper to taste
Directions
Cook the brown rice according to instructions. While rice is cooking thinly slice the tops off the tomatoes and hollow out.
Place ground turkey in a pan. Add garlic, chili powder, oregano, salt, pepper, and cumin. After turkey has browned add diced tomatoes. Once turkey had browned mix with 3/4 of the cheese and rice.
Spoon the mixture into the tomatoes and place in a casserole dish. Top off with a few sprinkles of cheese.
Bake for about 25 minutes.
*Use low-fat cheese for a meal in lower calories, I didn't have any at the time.
