Ingredients

    2 T olive oil
    3 cloves garlic
    1 onion, chopped
    1 can chickpeas
    1 can diced tomatoes (no salt added)
    2-3 cups fresh spinach or 1 package frozen
    spices: cumin, cardamom, celery seed, ginger

Directions

Heat oil, add garlic, onion, spices, cook till onion is transparent, add tomatoes and chickpeas until heated through, add spinach until wilted/thawed.
