Number of Servings: 6

Ingredients

    1 pint of grape tomatoes (quartered)
    1 haas avocado (chopped)
    1 can low sodium black beans (drained & rinsed)
    1 can low sodium yellow corn (drained & rinsed)
    1 tsp ground cumin
    1/4 red onion, chopped
    3 Weight Watchers string cheese (chopped) or 3 oz of skim Mozerella
    1 Tbs olive oil
    3 Tbs Balsamic Vinegar


Directions

Chop everything up and mix together in a medium bowl, add oil & vinegar & cumin... mix again. Let marinade for an hour and enjoy.
