Ingredients

Eggplant, fresh, 1 eggplant, peeled and sliced thin long wise, you will need 8 strips about 1/4 inch thick
Ground Turkey, 1 lb raw
Onions, raw, 1 cup, chopped
Ricotta Cheese, part skim milk, 1 cup
Parmesan Cheese, grated, 1 cup
*Kraft Shredded 2% Mexican Four Cheese blend, 1 cup
Egg substitute, liquid (Egg Beaters), 1 egg
Garlic powder, 1 tbsp or to taste
Hunts 100% Natural Sauce with Basil, Garlic & Oregano, 8oz can
*Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 1 cup
Directions
Peel eggplant and slice long wise...these are your noodles. You will need 8 pieces of eggplant about 1/4 in thick...set aside
Brown your ground turkey with onion and garlic...you can add Italian seasoning also
Mix your cheeses and the 1 eggbeater in a large bowl...set aside
Mix your Hunts Italian sauce and your diced tomatoes in s separate bowl and set aside
In a lightly greased or cooking spray, 9x13 baking dish.
Layer 1/2 of your eggplant, then meat, then tomato, then cheese...another layer of the same. Cover and bake 30 mins...remove cover and bake another 15 mins. 350 degree oven
Makes approx 8-- 2 1/2 inch squares
