Ingredients

    1 Boneless Skinless Chicken Breast, cut into pieces
    1 Cup of Minute Minute Rice (or Cooked Rice)
    1 Cup of Fresh, sliced Mushroom
    2 Garlic Cloves, chopped
    1/2 Cup Raw Onion, chopped
    3 Cup of Baby Spinach (Eye ball it, they shrink up)
    Balsamic Vinegar (to taste)
    Worcestershire Sauce (to taste)
    2 TableSpoons Extra Virgin Olive Oil

Directions

Chop the Garlic and onions.
In a large pan, add the olive oil about 2 tablespoons (eye ball it), set the pan to medium.
Add the garlic and onion to the pan.
In a sauce pan prepare the minute rice as directed on the box, add a splash of balsamic vinegar to the water.
When the onions are translucent , add the chicken to the pan. Add a splash of the Worcestershire Sauce and Balsamic vinegar.
When the chicken is no longer pink add your mushroom and spinach. Add the spinach a handful at a time, it wilts quickly so use your discretion as to how much.
When the rice finished you can add it to the pan to mix it in or serve the chicken, spinach, & mushroom over the rice.
Makes about 2 1 cup servings
