Introduction

Ingredients

Sauce:
1 can diced tomatoes (no added salt!)
2 freshTomatoes, diced
2 Tbsp Tomato paste
Oregano, dried 1 heaping Tbsp
Dried Hot Chili Peppers, 1 Tsp
Water, tap, 1 cup (8 fl oz)
Spinach, fresh, 4 cups sliced.
Noodles:
Ezekiel 4:9 sprouted grain lasagna noodle
3/4 box
Veggies:
Half of 1 large Zucchini, sliced
3 large mushrooms sliced
1 large red pepper sliced into 16 pieces
large sections of a 1/4 white onion
Cheese mixture:
I jar artichoke hearts drained rinsed and chopped
Jalepeno Soy Cheese, 1/2 package
Seasoning
Cheese topping:
Jalepeno Soy Cheese, 1/4 package
Directions
Makes 10 1 cup servings
Preheat oven to 350 F
Chop 1 clove garlic.
Fry in large saucepan.
Add oregano and chili.
Fry shortly and add tomato paste.
Then add the can diced tomatoes.
Chop fresh tomatoes. Add to sauce pan. Slowly add in water. Let simmer.
Wash and chop spinach. Set aside.
Cook noodles according to package.
Prepare veggies and lightly fry them.
Drain and rinse artichoke hearts. Place in bowl.
Grate soy cheese. Add to bowl. Season heavily with salt and pepper. Mix together.
As sauce thickens, take off heat and stir in spinach until soft.
In a 9x11 baking dish layer ingrediants in the following order.

veggies
noodle
sauce cheese mixture
noodle
sauce
veggie
sauce
The dish will be quite full. A baking tray can be placed on the rack below to catch any unwanted drippings.
After approximately 35 mins add some grated soy cheese on top and place the lasagna bake into the oven on broil until cheese has melted.
Let lasagna cool for 10 mins before serving.
