Introduction

Slightly cakey textured, very low fat and low sugar peanut butter chocolate chip cookies. Slightly cakey textured, very low fat and low sugar peanut butter chocolate chip cookies.
Number of Servings: 10

Ingredients

    5/8 c PB2 (powdered peanut butter)
    1/3 c water
    1/4 c erythritol granular (sugar substitute)
    1/8 c Splenda granular
    1/4 c EggBeaters or egg whites
    1/4 c oat flour*
    1/4 t baking soda
    1/8 t salt
    1/2 t vanilla
    1/4 c Hershey's sugar-free chocolate chips

    * I made 1/4 c oat flour by blending quick oats until a fine powder (approx 1/3 c oats to start)

Directions

Stir together PB2 and water. Mix in eggs and vanilla. Stir in sugar substitutes (you can use all Splenda if you prefer), soda, salt, and oat flour.
Stir in chocolate chips.

Drop by tablespoonfuls onto parchment lined cookie sheet. Bake 12 minutes at 350 degrees.

I think these taste best after they cool.
