Ingredients

    1 tbsp canola oil
    1 medium onion, minced
    1 clove garlic, minced
    1 stalk lemongrass, trimmed, bruised, and cut into 2 - 3 pieces
    2 tsp curry powder
    1 inch ginger root, cut into 6 pieces
    3 lime leaves (dry or fresh)
    4 cups low sodium chicken broth
    14 ounce can coconut milk, lite
    3/4 lb boneless skinless chicken breast, cubed
    2 cups mushrooms, quartered or sliced
    Juice of 2 limes
    2 tbsp fish sauce

Directions

Heat up oil in stock pan. Add onion, garlic and cook on medium for 1 minute. Ad lemongrass, curry, ginger and lime. Stir and cook for 3 minutes. Add broth. Bring to a boil, and then reduce heat to medium and continue to cook for 10 more minutes. Add coconut milk, chicken and mushrooms. Cook for 5 minutes or until chicken is cooked through. Stir in lime juice and fish sauce. Remove ginger, lime leaves and lemongrass stalks.

Makes 4 - 6 servings (calories based on 6 appetizer/first course servings)..

    Incredible!
    I made this with a Thai spice blend (couldn't find lemongrass) and omitted lime leaves (couldn't find them, either). It was incredible! - 3/17/10

    Lime leaves and lemongrass stalks can usually be found at specialty markets (ie if you have an international district or whole foods type store, you can usually at least find the lemongrass - sometimes in a tube). Glad you enjoyed!
