Introduction

I can't take full credit for this recipe as I used parts of a Weight Watchers recipe in an attempt to recreate the AMAZING but ridiculously fattening (Mac & Cheese)2 (it literally contains 123g of fat and 1,800 calories) at the Yard House restaurant, but it's easy, relatively low-fat and super delicious. Have a serving of this psuedo-indulgent mac & cheese with your favorite veggie! Ingredients

    2 1/4 c. spelt rotini (or regular macaroni or shells if you prefer)
    1 c. 2% or skim milk
    1 1/2 c. shredded cheese blend containing at least cheddar and Monterey jack
    1/3 c. shredded part-skim mozzarella cheese
    3 slices low-fat or fat-free American cheese, torn into pieces
    1/2 tsp. ground white pepper (this is really important!!)
    3 white mushrooms, sliced
    3 oz. cubed chicken breast, cooked (I use Trader Joe's Just Grilled Chicken Strips and cut them up)
    2 Tbsp. faux bacon bits
    1/8 c. bread crumbs
    1/4 tsp. extra virgin olive oil

Directions

Follow directions on pasta package.


While pasta is cooking, sautee sliced mushrooms in olive oil until they turn brown and become slightly softened. Covering sautee pan with a lid will steam them and therefore help them cook faster.


When pasta is cooked, drain and pour back into pot. Add American cheese pieces first so they begin to melt, then add milk. Turn stove on low heat as you add other ingredients.


Slowly add remaining cheeses, mushrooms, chicken, bread crumbs and white pepper, stirring to make sure everything melts together.


Once everything has combined into a gooey mass, add faux bacon bits and mix.


Makes six 1-cup servings.


**Note: This dish is addictive. Make sure not to make it for just yourself or you'll eat it all!
