Introduction

These pancakes are fortified with fruit purees. It makes them very moist and fluffy. These also freeze really well. So it's great to make a bunch ahead and freeze into individual servings. Just take out of the freezer and heat for about 30 seconds. An excellent quick, nutritious breakfast! These pancakes are fortified with fruit purees. It makes them very moist and fluffy. Ingredients

    1 1/2 cups bisquick
    1/2 c skim milk
    1 medium apple cored and cubed
    1 medium banana sliced into chunks
    3 tsp brown sugar
    1 tsp cinnamon
    1 egg

Directions

Place the apple, banana, milk, brown sugar and cinnamon in blender and puree until smooth. Add the mixture and the egg to the bisquick. Mix together until well blended. Drop 1/4 cup batter onto griddle and cook until bubbles appear on the surface. Flip over and cook one minute more or until browned on the other side.

Makes 6 servings, 3 pancakes each.
