Ingredients

    2 large potatoes, peeled and cubed
    2 large onions, chopped
    2 cloves of garlic, chopped
    2 large carrots, diced
    2 large celery stalks, chopped
    1 green pepper, chopped
    28 oz can diced tomatoes
    6 cups water
    1/4 tsp thyme
    1 small bay leaf
    couple sprigs fresh parsley chopped
    freshly ground pepper
    pepper flakes (optional) to taste
    2 cans cooked clams, chopped or minced, drained (save liquid)
    A bit of butter, about 2 tbsp
    oyster crackers or saltines



Directions

In large nonstick saucepan over high heat, saute onions, carrot, celery and green peppers in butter then add clam juice until tender. Add tomatoes, water and seasoning to soup mixture. Simmer for 20 minutes. Add clams and simmer for another 25 minutes. Be careful not to let this boil. It will be thick. Serve piping hot with oyster crackers or saltines.
