Introduction

One of the fastest dinners I've ever made! Nice blending of colors and packs a bang for nutrition. Props to sparkpeople.com recipes, "Spinach with Golden Raisins and Pine Nuts" - this recipe was a result of some of the remaining ingredients from that one. One of the fastest dinners I've ever made! Number of Servings: 5

Ingredients

1 bag of whole wheat noodles
    2 cloves of garlic
    1/2 cup pine nuts
1 tbsp extra virgin olive oil
    1 can red kidney beans
    1 bag spinach
    1 scoop ricotta cheese

Directions

1. Dice up and crush the garlic.
2. Boil the water for the noodles.
3. Heat the olive oil in a skillet, then add the crushed garlic and pine nuts, stirring until lightly browned. Lower the flame. How's the water for the noodles?
4. Add the noodles when the water is at a full boil, stirring occasionally while you follow the next steps.
3. Drain and rinse the kidney beans, then add them and the spinach to the skillet and stir in with the garlic and pine nuts, keeping the flame low. Cook just enough to slightly wilt the spinach & warm the beans.
4. Once the noodles are cooked, drain and put them in a serving dish that has a cover for storage, mix in the kidney beans/pine nuts, put the cover on and shake it up (or you could just stir it if you don't have a cover).
5. Serve with a scoop of ricotta cheese in the center.
