Introduction

Easy to make and a great tasting, sweet, healthy snack!! Easy to make and a great tasting, sweet, healthy snack!!
Number of Servings: 6

Ingredients

    1 butternut squash (about 4 cups cubed)
    1/4 cup of soft margarine
    6 tsp of light brown sugar
    1 tbsp cinnamon

Directions

Cut squash in half vertically and then into 6 separate pieces. Microwave on high for 5 minutes. Take squash out of the microwave and spread margarine out evenly between the 6 pieces. Do the same with the brown sugar and the cinnamon. Put back in microwave and cook on high for 8 minutes

    I peeled and cubed mine. (I also added nutmeg and ground cardamon) I tossed the brown sugar/spice mix w/ the squash before baking + drizzled the melted butter then baked it in a casserole dish for 30-45min @350 degree oven. ( I had a HUGE amount of squash, so baking a sm amt. may be less time) - 9/18/09

    Incredible!
    I used the same ingredients but made it a bit different & it was absolutely delicious!!! I just cut up the squash in cubes, and popped it and the butter in a microwave steam bag, cooked for a few minutes, then added the brown sugar and cinnamon, cooked just a few more minutes, and wow! Quick & easy! - 7/16/09
