Ingredients
-
1/3 cup all-purpose flour
1/8 teaspoon baking soda
1.8 teaspoon baking powder
3 tablespoons white sugar
1/8 egg
1/4 teaspoon vanilla extract
1 3/4 tablespoon Smart-Balance Buttery Spread
1/4 tablespoon applesauce
3/4 scoop french vanilla whey protein (25 mL, or 19.5 grams)
Directions
1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, add protein supplement powder to flour with the scoop, then take out an equal volume of flour. Mix with baking soda, and baking powder. Set aside.
2. In a large bowl, cream together the butter, applesauce, and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
3. Bake 8 to 10 minutes in the preheated oven, or until golden and edges slightly brown. Let stand on cookie sheet two minutes, then store in airtight container to trap moisture and preserve soft texture. Makes 6 large cookies and about 12 small 1" cookies.
