Ingredients

4 large Artichokes
1 Chicken Breast, bone and skin removed
1 small Onion
1 Bell Pepper, chopped
1/2 cup Mushrooms, chopped
4 slices Whole Wheat Bread, torn into pieces
1/2 cup Cheddar Cheese
1 cup Water
dash Black Pepper
dash Cajun Seasoning
Directions
1) Prepare artichokes by cutting stem from each artichoke at base, then carefully cut 1 inch straight across the top of each artichoke. Using kitchen scissors, cut the tips of the leaves of each artichoke. Gently spread apart the leaves and remove leaves from center to expose fuzzy "choke". With a spoon, carefully scrape out and discard choke from the center of each of the artichokes.
2) Rinse the artichokes and place in a 5 quart pot. Add 1 inch of water. Heat to boil over high heat. Cover and reduce heat to simmer for 30 minutes. Drain.
3) Preheat oven to 350 F degrees.
4) Meanwhile, in a skillet over medium-high heat, cook chicken breast until cooked through. Add onion, bell pepper, and mushrooms, just for a couple of moments to soften. Remove from skillet. Chop chicken into bite size pieces and place cooked ingredients in bowl.
5) Into mixture, add bread, cheese, water, black pepper, and Cajun seasoning. Mix thoroughly.
6) Spoon bread mixture into centers and between leaves of artichokes. Place stuffed artichokes in square backing dish. Cover with foil; bake for 25 minutes or until stuffing is hot and cheese melts.
