Ingredients

    butternut squash cubed- 3 -4 cups
    baby carrots/diced - 1 cup
    onion - 1 cup (or less) sauteed non fat spray
    celery - 1/2 cup sauteed non fat spray
    2 red potatoes cubed
    chicken broth 4-6 cups
    cornstarch (only if needed for thickening)

Directions

Saute' onions & celery. Bring broth to boil - add all ingredients and allow to simmer for 45 minutes. Place all ingredients in blender. Blend until smooth. Add cornstarch for thickening if needed.
