Introduction

This is an easy, basic sugar cookie recipe. I lightened it up by using Splenda instead of real sugar. I haven't tried it with low-fat margarine spread instead of butter, but I plan to. Ingredients

    1 1/2 c. Spenda
    2 3/4 c. flour (could use wheat although I use white)
    1 t. baking soda
    1/2 t. baking powder
    1 c. butter (or margarine)
    1 large egg
    1 T. vanilla (original recipe only calls for 1 t. but I love the taste with more!)

Directions

1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto un-greased cookie sheets.

3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
