Ingredients

12 Flour Tortillas (approx 10" diameter)
1.5 cup Mexican 4-cheese Blend
Burrito Filling as prepared below

1.5 lbs Ground Beef, extra lean
2 T Olive Oil
1 T Garlic Powder
1 can Diced Tomatoes
1 can Golden Sweet Corn
1 can Mushrooms, sliced
1 can Black Olives, sliced
1 cup Jalapeno & Bell Peppers, diced
1 Small Onion, diced
4 t Taco Seasoning
Directions
Burrito filling:
Sprinkle garlic powder over the ground beef as it browns in 2 T olive oil. Mix the tomatoes, corn, mushrooms, olives, peppers, onion, and taco seasoning into a large saucepan and set to simmer, covered. When the ground beef is browned, drain the grease away and add the beef to the saucepan. Continue to simmer (covered) for 20 minutes, stirring occasionally. Remove the lid and simmer, stirring occasionally, as it thickens -- approximately another 20 minutes. Refrigerate overnight. Makes 12 burritos.

Reheat 1/2 cup burrito filling per burrito. Moisten tortilla(s). Spread 1/8 cup cheese and 1/2 cup warmed burrito filling onto each tortilla, roll/fold as burrito. Spray the frying pan with oil or cooking spray and pan fry the burrito(s) approximately 5 minutes, turning once or twice. Serve & enjoy!
