There is an egg in here so its not vegetarian technically. However, it's easy to slap together with fresh ingredients. It's even faster if you use frozen spinach and canned mushrooms. Ingredients

454g Westsoy fat reduced firm tofu
1 large egg
1 TBS. extra virgin olive oil
1/2 small onion, diced
6 large mushrooms, diced
10 oz.fresh spinach, chopped
2 TBS. Parmesan cheese, grated
3 oz.Cabot 50%reduced fat jalapeno cheese, diced
1/2 tsp. black pepper
1/2 tsp. oregano, dried
1/8 tsp. basil, dried
2-3sprays of PAM for pie dish
Directions
Makes 4 servings.
Preheat oven to 350 degrees.
Mash tofu in large bowl. Add slightly beaten egg.
Set aside.
Heat oil and saute onions and mushrooms.
Steam spinach and add to tofu mixture with
sauted veggies.
Mix in both cheeses and the spices.
Spray pie dish, put in oven and set timer for 45 minutes. Enjoy piping hot.
